Organic soft dinkel flour has a characteristic floury texture, low protein and gluten content and a whiter color than hard. It is ideal for cakes, cookies, cookies, as well as for all sweets. With soft flour, the dough stays low, without elasticity. That is why this flour is mainly used in confectionery to create pastries and sweets.
Dinkel is a variety of wheat that is distinguished for its high nutritional value. Dinkel has high water solubility and so nutrients are easily absorbed by the body. It comes from the same genus as the common wheat. It is a variety of wheat with 21 chromosomes (compared to 42 common wheat) and several distinctive natural and nutritional characteristics, which differentiate it from the common wheat.
Dinkel contains special carbohydrates, which are an important anticoagulant in the blood, stimulate the body’s immune system and help increase its resistance to infections. It is also a great source of fiber and has large amounts of β-complex vitamins. The total protein content is from 10 to 25% higher than the common wheat varieties.
