Πιπέρι Σετσουάν

Το πιπέρι του Σετσουάν είναι διάσημο κινέζικο μπαχαρικό. Στην Ελλάδα δεν είναι τόσο γνωστό γιατί δεν τρώμε τόσο καυτερά φαγητά. Η Ελληνική κουζίνα χρησιμοποίει πιο παραδοσιακά μπαχαρικά. Το πιπέρι Σετσουάν, λίγο έντονο αλλά πολύ καυτερό και ελαφρά πικρό, είναι ένα μπαχαρικό πολύ σημαντικό και χαρακτηριστικό των ασιατικών και ινδικών κουζινών.

Το πιπέρι σετσουάν, είναι αναπόσπαστο στοιχείο της Ασιατικής γαστρονομίας, είναι ένα από τα μπαχαρικά του Κινέζικου μείγματος των πέντε μπαχαρικών και του μείγματος shichimi togarashi που φτιάχνεται στην Ιαπωνία. Είναι ξεχωριστό λόγω μιας ουσίας που περιέχει, η οποία προκαλεί ένα ελαφρύ, ανεπαίσθητο μούδιασμα στα χείλια και τη γλώσσα.

Αναδεικνύει τις σούπες και τα πιάτα κρέατος και δίνει μια ιδιαίτερη γεύση στα ψάρια και στα θαλασσινά. Επίσης χρησιμοποιείται σε πιάτα με πουλερικά, πίκλες και μαρινάδες. Στη μαγειρική συνδυάζεται με τσίλι, τζίντζερ και αστεροειδή γλυκάνισο
