Σταφίδα ( Μαύρη )

Σταφίδα ονομάζεται το αποξηραμένο σταφύλι. Η σταφίδα διακρίνεται σε δύο είδη, τη μαύρη και την άσπρη. Η άσπρη λέγεται και σουλτανίνα. Τρώγεται σκέτη ως γλυκό και προστίθεται συνήθως σε κέικ και διάφορα γλυκά.
Η πιο γνωστή ποικιλία μαύρης σταφίδας είναι η κορινθιακή.
Οι παραγωγοί συλλέγουν τον καρπό της μαύρης σταφίδας συνήθως τον μήνα Αύγουστο, τον αποξηραίνουν σε ειδικά διαμορφωμένους υπαίθριους χώρους που ονομάζονται αλώνια. Έπειτα από οκτώ ημέρες (εξαρτάται και από τον καιρό) την γυρίζουν για να αποξηρανθεί και από την άλλη όψη και έπειτα από 2-3 ημέρες την μαζεύουν και την πάνε για επεξεργασία. Η επεξεργασία αυτή είναι γνωστή ως “μακινάρισμα”. Εκεί απορρίπτονται τα περιττά σώματα και ξεχωρίζουν την χοντρή με την ψιλή ρόγα.
Στο παρελθόν οι σταφίδες αποτελούσαν βασικό στοιχείο της διατροφής των προγόνων μας, οι οποίοι πίστευαν ότι περιείχε μαγικές και ιδιαίτερα ευεργετικές ιδιότητες.
