Βιολογικό Φακόρυζο 500γρ

Οσο και να σας φαίνεται περίεργο το φακόρυζο είναι ένα παραδοσιακό νόστιμο ελληνικό πιάτο με υψηλή διατροφική αξία και καταβολές από πολύ παλιά.
Η ιδιαιτερότητα του πιάτου αυτό οφείλεται στον συνδυασμό του οσπρίου με το ρύζι που δίνει πρωτείνη υψηλής βιολογικής αξίας που συγκρίνεται εφάμιλλα με το κρέας

ΦΑΚΟΡΥΖΟ ΣΑΛΑΤΑ

Υλικά για 2 άτομα

1 σακ. ΦΑΚΟΡΥΖΟ 500γρ ΟΛΑ ΒΙΟ
50γρ σπόρους κάνναβης ΟΛΑ ΒΙΟ
1 φύλλο δάφνης
1 καρότο
1/2 πιπεριά κίτρινη,ή κόκκινη
1 ντομάτα
1 κρεμμυδάκι φρέσκο
2 κ.σούπας κάπαρη
ελαιόλαδο
μηλόξυδο ΟΛΑ ΒΙΟ
πετιμέζι ΟΛΑ ΒΙΟ
αλάτι Μεσολογγίου
λίγη ρίγανη
Συνταγή

Πλένουμε βράζουμε το φακόρυζο με το φύλλο δάφνης ως να μαλακώσει χωρίς να λιώσει. Σουρώνουμε και φυλάμε στην άκρη.
Όταν κρυώσει το μεταφέρουμε σε μια σαλατιέρα.
Κόβουμε την ντομάτα και την πιπεριά σε κύβους, αφαιρώντας τα σπόρια εντελώς.
Κόβουμε το κρεμμυδάκι σε ροδέλες.
Τρίβουμε στον τρίφτη (στην χοντρή πλευρά) το καρότο.
Προσθέτουμε στην σαλατιέρα όλα τα υλικά μαζί με τους σπόρους κάνναβης και ανακατεύουμε καλά.
Προσθέτουμε λάδι, ξύδι, πετιμέζι, αλατίζουμε καλά και ανακατεύουμε.
Αφήνουμε στο ψυγείο να δέσουν μεταξύ τους και σερβίρουμε σαν κύριο πιάτο ή ως συνοδευτικό.
