Το Ελληνικό αλεύρι καλαμποκιού δεν περιέχει μεγάλη ποσότητα γλουτένης, το αποτέλεσμα είναι να μην φουσκώνει αρκετά. Για να φτιάξουμε αρτοσκευάσματα, το αναμειγνύουμε κυρίως με σιτάλευρο. Χρησιμοποιείται ευρύτατα στην παρασκευή παιδικών τροφών εξαιτίας της περιορισμένης περιεκτικότητας σε γλουτένη. Έχει εξαιρετική γεύση αλλά είναι γενικά βαρύ και δύσκολο στην χρήση αλεύρι. Μπορείτε να φτιάξετε γευστικά αλμυρά και γλυκά εδέσματα, από ψωμί καλαμποκιού , κέικ, πίτες, κριτσίνια, κρέμες, ραβανί και ό,τι άλλο μπορεί να σας εμπνεύσει αυτός ο πολύτιμος χρυσός καρπός.

Το βιολογικό αλεύρι καλαμποκιού είναι αλεύρι με χαμηλή περιεκτικότητα σε πρωτεΐνες. Είναι πλούσιο σε Βιταμίνη Α, σίδηρο και ασβέστιο. Έχει χαμηλή περιεκτικότητα σε λιπαρά και αλάτι, ενώ δεν περιέχει χοληστερόλη. Περιέχονται πολλά μέταλλα και ιχνοστοιχεία όπως είναι ο σίδηρος (κατά της αναιμίας) και ο ψευδάργυρος που βοηθούν στη φυσιολογική ανάπτυξη των παιδιών
