Το βιολογικό μαλακό αλεύρι ντίνκελ έχει χαρακτηριστική αλευρώδη υφή, μικρή περιεκτικότητα σε πρωτεΐνες και γλουτένη και πιο άσπρο χρώμα από το σκληρό. Είναι ιδανικό για κέικ, μπισκότα, κουλουράκια, καθώς και για όλα τα γλυκά. Με το μαλακό αλεύρι, η ζύμη μένει χαμηλή, χωρίς ελαστικότητα. Γι’ αυτό, το αλεύρι αυτό χρησιμοποιείται κυρίως στη ζαχαροπλαστική για την δημιουργία αρτοσκευασμάτων και γλυκών.

Το ντίνκελ ειναι μια ποικιλία σιταριού που διακρίνεται για την υψηλή διατροφική του αξία. Το ντίνκελ έχει υψηλή διαλυτότητα στο νερό και έτσι οι θρεπτικές ουσίες απορροφώνται εύκολα από το σώμα. Προέρχεται από το ίδιο γένος με τον κοινό σίτο. Είναι ποικιλία σταριού με 21 χρωμοσώματα (έναντι 42 του κοινού σταριού) και αρκετά διακριτικά φυσικά και θρεπτικά χαρακτηριστικά, τα οποία το διαφοροποιούν από τον κοινό σίτο.

Το ντίνκελ περιέχει ειδικούς υδατάνθρακες , που αποτελούν έναν σημαντικό αντιπηκτικό παράγοντα στο αίμα, υποκινούν το ανοσοποιητικό σύστημα του σώματος και βοηθούν να αυξηθεί η αντίστασή του στις μολύνσεις. Είναι επίσης μια θαυμάσια πηγή ινών και έχει μεγάλα ποσά β-σύνθετων βιταμινών. Η περιεκτικότητα σε συνολική πρωτεΐνη, είναι από 10 έως 25% μεγαλύτερη από τις κοινές ποικιλίες του σιταριού.
