Είναι πλούσιες σε βιταμίνες του συμπλέγματος Β και κυρίως σε ριβοφλαβίνη (Β2) και νιασίνη (Β3), σε βιταμίνες Ε και Κ, ενώ περιέχει πολλά μέταλλα και ιχνοστοιχεία (ασβέστιο, σίδηρο, μαγνήσιο, φώσφορο, κάλιο, ψευδάργυρο, μαγγάνιο, σελήνιο και χαλκό).Μας εφοδιάζουν, επίσης, με αρκετές φυτικές ίνες, καθώς 100 γρ. φαγόπυρου περιέχουν 10 γρ. φυτικών ινών, ενώ είναι τροφή πλούσια σε φλαβονοειδή, ουσίες με ισχυρή αντιοξειδωτική και αντιφλεγμονώδη δράση.Το φαγόπυρο δεν περιέχει γλουτένη, έτσι λατρεύεται από όσους έχουν δυσανεξία σε αυτή (Κοιλιοκάκη).Το φαγόπυρο, λόγω της υψηλής περιεκτικότητας σε φυτικεςή ίνες, και σύνθετους υδατάνθρακες, κάνει καλό σε άτομα με υψηλή χοληστερόλη, αφού συμβάλλει στη μείωση της.
