Αρχές της Άνοιξης και για λίγες μόνο εβδομάδες καθώς σταδιακά σκουραίνει και πικραίνει κάνουν τρύπες στους κορμούς των δέντρων και συγκεντρώνουν τον χυμός σε κουβάδες. Το σιρόπι σφενδάμου μετά την περισυλλογή του θερμαίνεται για να αποβάλει το νερό που περιέχει στη φυσική του μορφή.
