Προέρχεται από την ενζυμική αμαύρωση του λευκού σκόρδου η οποία του δίνει το μαύρο χρώμα και εξαφανίζει την έντονη και καυστική μυρωδιά. Η διαδικασία αυτή γίνεται μετά από πολύμηνη ωρίμανση κάτω από αυστηρή ελεγχόμενη θερμοκρασία και υγρασία. Το αποτέλεσμα είναι μια γλυκιά και ευχάριστα καπνιστή γεύση χωρίς την έντονη μυρωδιά που έχει το κοινό σκόρδο και χωρίς να χαθούν τα ωφέλιμα συστατικά του.
Μπορεί να χρησιμοποιηθεί σε όλα τα φαγητά τονίζοντας την γεύση τους με ιδιαίτερη χρήση σε ζυμαρικά, πίτσες, σάλτσες και κρεατικά. ‘
