Η Στέβια  είναι είδος φυτού με προέλευση τη Βραζιλία και την Παραγουάη. Περιέχει μια ουσία η οποία ονομάζεται στεβιόζη ή στεβιόλη η οποία έχει μεγαλύτερη γλυκαντική δύναμη από την ζάχαρη. Χρησιμοποιείται σε αρκετές χώρες ως εναλλακτική γλυκαντική ουσία από την ζάχαρη.
Τα τελευταία χρόνια το φυτό στέβια και τα γλυκαντικά που προέρχονται από τα φύλλα του τράβηξαν την προσοχή εξαιτίας της αυξημένης ζήτησης σε τρόφιμα χαμηλής περιεκτικότητας σε ζάχαρη και θερμίδες. Τα φύλλα του φυτού και τα γλυκαντικά που προέρχονται από αυτό έχουν πολλαπλάσια γλυκύτητα από τη ζάχαρη, δεν αποδίδουν ενέργεια (θερμίδες).
Η στέβια δεν περιέχει υδατάνθρακες και δεν επηρεάζει τη γλυκόζη στο αίμα, επομένως μπορεί να καταναλωθεί από ανθρώπους με διαβήτη.
