Το αλεύρι ντίνκελ έχει μια ωραία γλυκιά γεύση. Η εξαιρετική αυτή ποικιλία σταριού, έχει υψηλότερο επίπεδο πρωτεϊνών, ανόργανων συστατικών, βιταμινών και ιχνοστοιχείων. Επιπλέον, περιέχει τα οκτώ απαραίτητα αμινοξέα. Η καλή συμβολή του μαγνησίου, του σιδήρου, του φωσφόρου, της βιταμίνης Ε, της βιταμίνης Β και της προβιταμίνης Α, το καθιστά πολύ θρεπτικό σε σχέση με το κοινό σιτάρι.
