Το πέστο είναι ιταλικό παρασκεύασμα με βάση τα φύλλα του βασιλικού, σκόρδο και ελαιόλαδο, κουκουνάρι και τυρί πεκορίνο ή παρμεζάνα, που πολτοποιούνται ώστε να έχουν υφή σάλτσας. Χρησιμοποιείται ως σάλτσα σε μακαρόνια Το συγκεκριμένο πέστο έχει ως βάση του το μαύρο kale το οποίο είναι μια ποικιλία άγριου λάχανου με υψηλή διατροφική αξία που το κατατάσσει ανάμεσα στις τροφές με την μεγαλύτερη θρεπτική πυκνότητα στον πλανήτη. Περιέχει 5 φορές περισσότερη βιταμίνη C από το σπανάκι, είναι πλούσιο σε πρωτεΐνες και φυτικές ίνες, μαγνήσιο, ποτάσιο, και ασβέστιο.Το kale περιέχει μεγάλες ποσότητες βιταμινών A, B και K και έχει τη μεγαλύτερη συγκέντρωση βιταμίνης C από όλα τα λαχανικά. Θωρακίζει την άμυνα του οργανισμού μας, ενδυναμώνει το νευρικό και το σκελετικό σύστημα και βελτιώνει την ανάπλαση των κυττάρων. Περιέχει πολύ λίγο λίπος, αλλά ένα μεγάλο μέρος είναι η ω-3 που ονομάζεται άλφα λινολενικό οξύ.
