Με ιστορία πάνω από μία χιλιετία και καταγωγή την γνωστή σε όλους Μόντενας της Ιταλίας πατρίδα του προιόντος το βαλσάμικο ξύδι μοιάζει περισσότερο με κρασί παρά με ξύδι, αναπτύσσει τις πολύπλοκες γεύσεις του και αποκτά τη σιροπιαστή αυτή σύστασή του, σχεδόν σαν καραμέλα, μέσα σε μια σειρά παλιών ξύλινων βαρελιών. Το βαλσάμικο ξύδι είναι πολύ αρωματικό και διατίθεται σε πολλές απαλές και λεπτές γεύσεις. Το αυθεντικό βαλσάμικο ξύδι ωριμάζει για τουλάχιστον 6 έτη και κατά προτίμηση για 12, αν και υπάρχουν περιπτώσεις όπου η διαδικασία ωρίμανσής του διαρκεί πολύ περισσότερα έτη, φτάνοντας έως και 150! Τα περισσότερα είδη ξυδιού έχουν ελάχιστες θερμίδες (100 γρ. ξύδι από κόκκινο ή λευκό κρασί αποδίδουν περίπου 18-19 kcal και 100 γρ. ξύδι βαλσάμικο αποδίδει 88 kcal) και καθόλου λίπος. Μην ξεχνάτε όμως ότι το βαλσάμικο, λόγω του ότι είναι πιο παχύρρευστο και πιο αρωματικό, αρκούν ελάχιστες σταγόνες και μπορεί να μετατρέψει μια απλή σαλάτα σε ένα γευστικό πιάτο.
