ΞΥΛΙΤΟΛΗ ή ζάχαρη συμήδας Φυσική γλυκαντική ουσία φυτικής προέλευσης, έχει μια πολύ παρόμοια γεύση και γλυκύτητα με τη ζάχαρη. Η ξυλιτόλη, που ονομάζεται επίσης ζάχαρη σημύδας – είναι παρούσα σε πολλά φυτά, φρούτα καθώς και το ανθρώπινο σώμα παράγει κάποια πολύ μικρή ποσότητα. Ξυλιτόλη παρέχει περίπου την ίδια γλυκύτητα με τη ζάχαρη με μια μικρή δροσερή αίσθηση. Παρά τις μεγάλες ομοιότητες των δύο, η ξυλιτόλη έχει σαφώς μια σειρά από πλεονεκτήματα για την υγεία. Σε αντίθεση με τη ζάχαρη και το υψηλής περιεκτικότητας σε φρουκτόζη, σιρόπι καλαμποκιού, η ξυλιτόλη δεν προκαλεί τερηδόνα. Έχει χαμηλό γλυκαιμικό δείκτη (GI = 7) – μπορεί να χρησιμοποιηθεί από διαβητικούς, δεν προκαλεί άλματα στα επίπεδα του σακχάρου στο αίμα.
